Moonlight White
Moonlight White is made with minimal processing,
relying mainly on natural withering.Due to drought conditions this year, the
fresh tealeaves had less moisture and during processing, the tea dried at a
faster rate, so this lot seems a bit less oxidized and has a noticeably fresher
edge to it. Still, this tea has its distinctive fruity, melon, honey and a bit
flowery character. It has a truly unique character of ancient cultivated
assamica with specific fruity, honey and brisk character that differs from the
more savory Fuding white teas. Prepare like white tea or try using more leaf, a
guywan and prepare using gong fu cha method, similar to making
pu-erh.

White
tea contains the highest level of antioxidants of
all varieties of tea. In fact, research reveals that white tea has 10 times more
antioxidants than vitamin E and contains high doses of polyphenols which
may help lower undesirable fats in the blood. These protected nutrients
protect the body from damage by free radicals, which can accelerate aging.
Further, white tea is filled with catechins, an antioxidant that has been found
to lower cholesterol. White tea has been shown to have a positive effect in
fighting cancer-causing cells, and may in fact help protect against certain
types of cancer including prostate, stomach or colon cancers. Other healthful
benefits from drinking white tea include greater bone density and strength,
protection against many bacteria and viruses, even helping lower blood
pressure.

Brewing
Instructions: Steep 4 Tbp in 6
ounces of water. Use 185 degree water. Steep the first infusion for 3 minutes,
2nd infusion for 3 minutes, 4th,5th and subsequent infusions for a longer time
based on the desired strength.
